BBQ Leftovers: How to Make Them Into Something New

You cooked too much BBQ for Juneteenth or the 4th of July (if you still celebrate it). You thought you wouldn’t have this many leftovers, but you’re stuck with barbecued ribs and chicken. So what to do with BBQ leftovers? Well, you can always just throw the food away orrrrrrrrr you can make something new with the leftover meat.

I don’t know if I ever told you guys that I like to eat. Like, I love to eat so much that people give me food as gifts. I know, I know. Don’t judge me. My waistline does enough of that. Anyway, I was sitting at home, and the greediness kicked in. I realized that I had leftover ribs and leg quarters in the freezer from the last BBQ and started thinking, “What can I do with this?”

I decided that I had too much leftover BBQ meat for just one meal, so I made two. First, I warmed up the leg quarters and then pulled the meat from the bones with 2 forks. From there, I proceeded to make me a salad. Yes, a salad. I’m not sure where you’re from, but here in the South, we have several restaurants that sell pulled meat salads. I proceeded with building my salad, adding lettuce, cheese, pepperoncini peppers, the pulled chicken, and topping with crackers -I don’t like croutons. And here’s the result.

For my second meal or should I say dish-I wanted something with a little more weight on it. I decided to do a pasta. I boiled and drained my fettuccine noodles, put them in my all purpose pan, and began preparing my sauce. About that sauce, ummmm. Well, I had some store-bought alfredo sauce, but when I opened it, it had mold. 🙁 I’m not sure why because it wasn’t expired and was refrigerated, but I guess I didn’t have the jar closed all the way. So, I had to make do with what I had. I added milk to my pan and some mozzarella cheese and seasoned them to taste. I wanted the sauce a little more creamy, so I added shredded cheddar cheese. Some people don’t like pre-shredded cheese because it has fillers and is not 100% cheese, but who has the time to shred cheese?

I microwaved the pulled chicken left over from the salad as well as some plain barbecued ribs. When I say plain, I mean no sauces because those babies were seasoned. Chef kiss! I pulled the rib meat from the bones and shredded them as much as possible. I then added both types of meat to the pasta. And voila, we have barbecued chicken and rib pasta. It was so good, and I remembered why I can’t lose weight. LOL.

Don’t be afraid to experiment in the kitchen. You can make just about any combination taste good. This was a proof to that. Well, that was what I did with my BBQ leftovers. Let me know what you did with yours. As always, talk to you later, ladybugs!
